If you have been considering roasting a pumpkin, make sure you also save and roast seeds! Toasted pumpkin seeds are a wonderfully healthy salty snack.
Here is how we make them in my home:
1. Scoop and clean seeds by rinsing them under cool running water
2. Boil seeds in salty water for about 10 minutes, then drain.
3. Spread seeds on a baking sheet. Drizzle with melted butter, and toss to coat. Then sprinkle with salt, seasoned salt, or garlic salt.
4. Bake for 45 minutes to one hour, in a 300 degree oven, stirring every 5-10 min, until golden.
And that's it, allow to cool and enjoy!
