For a fast fun fall breakfast, that doesn't take much planning ahead, pumpkin French toast is a clear winner. It comes together as fast as traditional recipes, but tastes decadent.
Ingredients
3/4 cup heavy whipping cream
1/2 cup pumpkin puree
4 eggs
2 tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8th teaspoon ginger
10 pieces of your favorite sliced bread, we love 100% Whole Wheat
Preheat your griddle to 350 degrees
Combine all ingredients, except the bread. I like to whisk them together so I know they are well combined.
Place in a 8x8 pan,
Dip slices of bread into wet mixture, making sure both sides are well coated.
Fry on griddle, in batches, until golden.
Enjoy!
We love to top these with real maple syrup, and sometimes a dusting of powdered sugar.
