My entire family loves these sweet nuts! Whenever I make a batch many get nibbled before they make it to their intended dish, which is usually a salad, but they are awesome on sweet potatoes or winter squash as well. The salad at the bottom is one of our go-to dishes to bring to family gatherings, and small group get-togethers.
Ingredients
3 cups whole or chopped walnuts
2 tablespoons water
½ cup pure maple syrup
½ teaspoon vanilla extract
2 tablespoons orange juice (about 1 clementine worth)
Salt (optional)
Directions:
Preheat oven to 325.
Combine ingredients in a heavy saucepan (I love using cast iron for this recipe). Simmer over low heat, stirring constantly, until most of the liquid has been absorbed.
Spread onto a greased cookie sheet and sprinkle with a pinch of salt (if desired). Bake for 10 min stirring after 5 min to avoid burning.
Remove from oven and allow to cool on pan. Enjoy!
Salad Suggestions:
Spinach or Kale
Candied Walnuts
Diced Apples,
Craisins
Shredded Parmesan.
Combine all ingredients toss and enjoy, or serve all ingredients separately to allow your guests to customize to their preferences.
*For a more summery variation swap apples and Craisins for strawberries, and swap parmesan for feta. Top with a dressing of your choice, I love poppy seed dressing with both variations!
